Elderflower jelly with strawberries and blueberries

Have you tried elderflower before? I've only recently had the pleasure...and I absolutely love it. Elderflower tastes just as beautiful as its flowers look; mildly sweet, fragrant and oh so delicate. Not content with just drinking it, I made jellies with elderflower cordial and jazzed it up with blueberries and strawberries for a delightful summertime treat. Here's how:
Ingredients

350ml elderflower cordial
1 tablespoon or 1 sachet gelatine powder
1 handful strawberries, sliced
1 handful blueberries

Method

1. Pour 150ml hot water into a measuring cyliner and add gelatine powder. Stir briskly until dissolved.

2. Add cordial to the gelatine mixture and stir well.

3. Chill in fridge for ~ 1 hour or until the mixture thickens but not set. (This ensures the berries are suspended in jelly rather than float)

4. Divide mixture into 2 separate containers and add strawberries and blueberries.

5. Stir into glasses.

6. Return to fridge and leave for few hours until set.

What a beautiful summertime treat! We pick elder flowers in a wood near our home to make cordial, it is a treat for the senses, such delicate blossoms, pretty scent, and the flavour is just sublime! (I also buy an elderflower liqueur for a very floral cocktail, but that's another story...) thanks for sharing this recipe, I'm going to give it a go! Chrissie x

I only recently heard of Elderflower because I believe it's what's in the now-trendy St Germaine liquer. It smells fabulous! These little jellies are so gorgeous and I bet they taste as good as they look :)
