I feel like I haven't made myself a little sweet treat in ages and it just didn't feel right. Between nursing Alexander and catching up on sleep and doing household chores, it seemed futile to try to fit in time for leisurely cooking. I finally figured out that the trick is to attempt only really easy recipes that take hardly any time at all. And apple fritters is one such treat. These bad boys taste real good freshly deep fried, when they're all crispy and hot - I dare you to stop at one.
2 tablespoon caster sugar
2 tablespoon brandy
1/2 cup self-raising flour
pinch of salt
vegetable oil, for deep frying
1. Peel and core apples. Slice into ~1 cm thick rings. Add sugar and brandy and allow to stand for 30 minutes.
2. Whisk egg and milk in medium bowl. Then stir in flour and salt.
3. Heat oil in pot. Dip apple rings in batter and allow excess to drip. Deep fry until golden brown then transfer onto paper towel to drain. Dust with icing sugar and serve immediately.
