Banana nut oatmeal cookies

These are probably the healthiest things I've baked in a long while. The sweetness comes entirely from the raisins and mashed bananas - no added sugar! Plus the oats give it a lovely wholesome crunch. There's no flour involved so if you used the gluten-free oats (ie. those without rye or wheat), it's becomes a gluten-free treat. As healthy as they are, they taste awesome too. I really do love them and I only wish I made a bigger batch.
Banana nut oatmeal cookies (makes ~20)

Ingredients
1 cup uncooked oats
1/2 raisins
1/2 chopped pecan nuts
2 mashed bananas
1/3 cup vegetable oil

Method

1. Preheat oven to 180 degrees celsius. Line baking tray with baking paper.
2. Combine dry ingredients in bowl and mix well. Add bananas and oil, stirring to combine. Let stand for 15 minutes.
3.  Roll the mixture into 4-cm balls and place on lined baking tray. Bake for 15 minutes or until golden. Cool on wire racks and store in airtight container.

Oh! I want to try this except I don't have pecans. Maybe I'll substitute it with peanuts. I'll let you know how it tastes like.

Hi Trishie. I think I will make these. I saw a similar recipe from that girl who does blogilates on YouTube. Hers were in the microwave though, which kind of put me off. Yours look great, but I've some fusspots at my place. I think I'm going to be naughty and use chocolate chips. Dark ones, for the antioxidants :D

This is DEFINITELY a keeper. I have been wondering what to nake with banana other than banana bread/muffin. From all ingredients and no flour, it is super healthy. Cant wait to try. Thank you so much for sharing.
