From garden to kitchen: sweet chilli sauce

Our chilli plants are fruiting at the moment. As usual, there is far more chillies than I can use for cooking, so I decided to whip up some sweet chilli sauce of my own.
As it turns out, homemade sweet chilli sauce is delicious, sweet and jammy with some punch to it. I honestly don't know why I've never tried making my own before. For this recipe I used 2 different types of chillies from the garden; the long chillies which have a lot of heat and the little bell ones which are very mild. This ensures that the balance right between sweet and spicy is just about right.
Sweet chilli sauce
Ingredients
200g chillies
1 garlic clove, peeled
1 cup white vinegar
1 cup caster sugar
Method
1. Roughly chop 2 long red chillies (with seeds) and place in bowl of food processor with peeled garlic clove. Deseed and roughly chop remaining chillies and add to food processor together with 1/3 cup of white vinegar. Process until finely chopped.
2. Place the chilli mixture in a saucepan, add remaining white vinegar and caster sugar and bring to boil. 
3. Reduce heat to medium and simmer for 30 minutes or until the mixture reduces to a jammy consistency. Ladle into a sterilised jar and seal.

Sweet chilli sauce is pretty versatile but I especially love to use it as a dipping sauce. To test my first batch of sweet chilli sauce, I made some spring rolls for the occasion and boy, they tasted great together.

Iv never attempted to make my own chilli sauce either, this looks just like they real thing but I bet it tastes a zillion times better.
Sweet chilli sauce and spring rolls are a match made in heavan arent they! Thats it Im off to chinese tonight to order this very thing :)
