I first fell in love with pear and raspberry bread at a cafe recently. But at $3 a slice, I figured I could make a whole loaf for the same dollars. And so I did. My loaf probably does not look as pretty but it tastes very much the same. And because it's homemade, I can control the amount of sugar and fruit and oil that goes into it. My recipe below is loaded up with fruits and uses only one-third a cup of sugar so it's a lot less evil than it looks.
Ingredients
- 1 1/2 cups self-raising flour
- 1/3 cup brown sugar
- 1/2 cup chopped pecans
- 1/2 teaspoon bicarbonate of soda
- 2 lightly beaten eggs
- 1/2 cup milk
- 1/3 cup olive oil
- 1 pear, peeled and chopped
- 1 cup frozen mixed berries
Method
- Preheat oven to 170°C. Grease a 10cm x 20cm loaf tin. Sift flour into a large bowl. Add brown sugar, and bicarbonate of soda.
- Place eggs, milk and olive oil in a large bowl and whisk until well combined. Stir through pear and mixed berries.
- Pour the mixture into the centre of the flour mixture, folding gently until just combined. Spoon the mixture into the prepared loaf tin. Bake for 45-50 minutes or until golden and cooked through. Remove from oven and set aside to cool for 5 minutes before turning onto a wire rack. Serve warm or at room temperature.

Oh wow! Here's another recipe of yours that I've got to try. i know what you mean. 9 times out of 10, the cakes that I've tried in cafes and fancy patisserie haven't pass muster. They're always way too sweet and rather dry.

Yum. I love fruit bread. This feels like an autumn recipe so I will save it make it in a month or so, when the fruits are in season. Except I will probably slather mine in butter, thus undoing all your healthy good work!
