Chocolate and banana bread

Soon after my successful attempt at making pear and mixed berries bread, I actually managed to find a beautiful bread plate (pictured above) on one of my thrifting adventures. Naturally, I decided it was a sign that I just had to make MORE. I had 3 overripe bananas destined for baking plus some leftover chocolate at home so I decided to whip up some chocolate and banana bread. And my, it was divine and moist and everything nice!

Recipe is below, if you can't be content with a virtual slice.

Chocolate and banana bread:

Ingredients
  • 1 1/2 cups self-raising flour
  • 1/2 cup brown sugar
  • 1/4 teaspoon mixed spice
  • 1/2 teaspoon bicarbonate of soda
  • 2 lightly beaten eggs
  • 1/2 cup milk
  • 1/3 cup olive oil
  • 3 mashed overripe bananas
  • 1 1/2 cups chopped milk or dark chocolate
Method
  1. Preheat oven to 170°C. Grease a 10cm x 20cm loaf tin. Sift flour into a large bowl. Add brown sugar, and bicarbonate of soda.
  2. Place eggs, milk and olive oil in a large bowl and whisk until well combined. Stir through banana and chopped chocolate.
  3. Pour the mixture into the centre of the flour mixture, folding gently until just combined. Spoon the mixture into the prepared loaf tin. Bake for 45-50 minutes or until golden and cooked through. Remove from oven and set aside to cool for 5 minutes before turning onto a wire rack. Serve warm or at room temperature.

One thing I am looking forward to in Autumn, is starting to bake again.
Somehow in summer, I don't fancy anything sweet except fresh fruit and ice cream.

Oh this looks SO GOOD. I don't like bananas but I LOVE banana bread. They just make the bread so moist and delicious. Also a huge fan of strawberry bread, but I rarely see that anywhere. I'd like to try making it sometime!

oh yum! i'm not much of a banana fan generally, but once my mum needed to use up an overripe banana so she put it in some apple & cinnamon muffins and i loved it! it's far from my favourite fruit, but it does add a little something else to baked goods. :)
