Blueberry crumble muffins

Muffins are the first things I ever learnt to bake, and I still love making (and eating them). They are perfect for days when I want a sweet treat that is easy and foolproof to make. The crumble topping adds a nice crunch and makes this just a little bit more special than the usual run of the mill muffin.

Ingredients
  • Melted butter, to grease
  • 375g (2 1/2 cups) self-raising flour
  • 155g (3/4 cup, firmly packed) brown sugar
  • 150g butter, melted
  • 80ml (1/3 cup) milk
  • 2 eggs, lightly whisked
  • 220g frozen blueberries, thawed
Crumble topping
  • 115g (3/4 cup) plain flour
  • 90g chilled butter, chopped
  • 100g (1/2 cup, firmly packed) brown sugar
Method
  1. Preheat oven to 180°C. Lightly grease 12 cup muffin tray.
  2. To make the crumble topping, mix the flour and sugar in a bowl. Use your fingertips to rub the butter into the mixture until it resembles coarse breadcrumb.
  3. Place the flour and sugar in a large bowl. Add the butter, milk and egg, and stir until well combined. Add blueberries to the mixture and gently fold in.
  4. Spoon the mixture evenly among the prepared muffin tray. Sprinkle over the crumble mixture. Bake in oven for 20-25 minutes or until a skewer inserted into the centres comes out clean. Set aside in the pans for 15 minutes to cool slightly.
  5. Dust with icing sugar before serving.

I am actually only just now at 24 developing my sweet tooth believe it or not but it's coming on hard & fast! I never used to like anything sweet but something like these muffins, especiallyyyy with the crumble are high on my baking agenda now. I think they'd be even more amazing served warm with just a dollop of cream :)

This is great, they look so delicious. And the crumble topic is a great idea. I always use that for apple pie, but never thought of using it with muffins. Defenitely gonna try this.
