Spring rolls for spring time

Made a big batch of spring rolls stuffed full of prawns, water chestnuts, chives and spring onions. I can never make them into neat parcels like in the shops, but they are nevertheless so yummy and easy to eat; Stu and I worked very hard to resist the temptation of eating all 40 of them at once!

I love my spring rolls dipped in plum sauce...how do you eat yours?

Prawn Spring Rolls
Filling
1/4 teaspoon salt
1/4 teaspoon sugar
1 tablespoon potato flour
600g cooked prawns, peeled and diced
100g chives, cut into 2 cm pieces
30g spring onions, finely chopped
160g water chestnuts (canned), diced
1 tablespoon plain flour
spring roll pastry (I used a pack of 50, 10cm in size)
vegetable oil
Combine all the filling ingredients except for the chives and shallots. Then add chives and shallots and mix well.
Mix the plain flour with 1 tablespoon of water to make a paste
Fill a spring roll pastry with a tablespoon of filling mixture. Spread the mixture evenly over hald of the pastry, roll and seal with the flour paste.
Repeat with remaining filling and pastry.
Heat up enough oil in wotk or deep fry until they start to float and are lightly browned. Drain on paper towels before serving with prefered sauce.

These spring rolls look delicious. I like to dip mine in fish sauce but that's because I'm Vietnamese and we eat everything with fish sauce. Great post, sweetie and thank you for visiting my blog and for leaving a comment. I really appreciate it.

although i deffinately dont have prawns in my spring rolls they sound lovely. I usually dip mine in sweet chilli sauce :)

MMMmmm Gosh! You know you're going to have to share the recipe. You should know by now not to make a food post without the recipe attached!

I like my spring rolls with veggies in them. Although I live on the ocean, I am not a fan of seafood! haha
Dip mine in a red pepper-flake sauce, please.

Ooooh, Yumm-O! Can you pass on an authentic recipe for me?? We usually just do the boring cabbage/veggie only type, but I would LOVE to serve some of those up... And if you could figure out a way to send some of that spring with it, I would appreciate it even more! Our winter is just beginning...

YAY! Thanks Trishie! I will be trying this soon on a "cheat" day. We're on a gluten free diet for Riley now- but this isn't too bad with the potato flour too. I let him cheat every so often (since it's for ADHD and not allergy issues), and he's a big fan. You are ah-may-ziiing! :o)
